As we watch Mother Nature change her mind every few minutes the staff find themselves talking about what they like to eat and drink at this time of the year, so I asked Sous Chef Mike Dunlop what he likes to make and here is favourite warm-up dish:
Tomato, Spinach & Feta Soup
2 large onions
1/2 head of celery
3 carrots
100oz Tin of Plum Tomatoes
1 box Chopped Spinach
1litre Vegetable Stock
2 cups Feta Cheese
Pinch of Thyme
Pinch of Oregano
Salt & Pepper to Flavour
Medium dice the vegetables, sweat them off. Add tomatoes, vegetables stock and herbs. Simmer for 40-60 minutes. Crumble feta in soup, add salt & pepper to taste.
Enjoy with a big piece of crusty sourdough.
